Ingredients
- 1.5 cups cooked long grain brown rice
2 Tbsp fresh-squeezed lemon juice
2 Tbsp extra virgin olive oil
1 tsp dried oregano (or 1 Tbsp fresh minced)
3 Tbsp minced fresh basil
1/4 tsp black pepper
2 cups chopped fresh spinach leaves
1 finely chopped medium red bell pepper
1 small cucumber - peeled, seeded and finely diced
1/2 cup chopped green onions
1/2 cup chopped kalamata olives
1/4 cup toasted pumpkin seeds*
1/4 cup toasted sunflower seeds*
*(to toast, place all seeds together on a baking sheet. place them in the oven at 275-degrees for about 10-15 minutes, stirring once)
