4 lbs Jimmy Dean/Bob Evans/other good quality, flavorful sausage (low fat isn't necessary, you'll be draining off a lot of the fat later anyway)
1.5 lbs sharp cheddar cheese (more or less cheese as desired) (sharper or less sharp cheese as desired)
1 cup buttermilk (more or less as needed, depending on humidity. enough to get a soft dough without being sticky) (milk can be substituted, but the biscuits won't be as fluffy)
