White Primavera Lasagna

Ingredients

    1 package Cascadian Farms, winter squash cooked according to package instructions and cooled

    Roasted veggies
    I used
    1 zucchini, cubed
    1 yellow summer squash, cubed,
    1 smallish eggplant, cubed
    1/2 package frozen spinach, thawed and squeezed dry
    3 garlic cloves
    6 ounce jar of marinated artichokes, rinsed
    1 cup red onions
    8 ounce slice mushrooms, crimini preferably
    1 tsp olive oil
    1 tsp salt
    1 TB Mrs. Dash Garlic and Herb

    1 red pepper (roasted and chopped)
    12 dreamfields lasagna noodles, cooked al dente



    3 cloves garlic
    1/2 cup heavy cream, water or milk
    1 TB butter
    1 package Pioneer Biscuit gravy mix
    1/2 tsp salt

    2 TB fresh Italian flat leaf parsley
    2 TB Mrs. Dash garlic and Herb seasoning
    3 TB Pesto
    2 eggs
    1/2 tsp salt

    2 cups part skim ricotta cheese
    1.5 cups mozarella cheese
    4 ounces, freshly grated parmesean cheese
    pepper to taste
    dash of nutmeg
