1/2 cup Part Skim Shredded Colby-Jack Cheese (or any preferred cheese)
1/2 Red Onion, chopped
1/2 Red Bell Pepper, de-seeded and chopped
1/4 cup Reduced Sodium Beef Broth
1/4 cup Tomatillo Sauce (Pace and other brands have a verde sauce - or you can try my easy recipe for Super Tomatillo-Avocado Salsa)
2 tbsp Chili Powder
1/2 tbsp Cayenne Pepper
1/2 tbsp Allspice
1/2 tbsp Coriander
1/2 tbsp Cumin
1 tsp Extra Virgin Olive Oil
Pinch of Black Pepper
Handful of Parsley
