    6 cups dry whole wheat rotini, or pasta of your choice, cooked and chilled

    1-2 bags frozen artichoke hearts, heated through in microwave

    1 (15 oz) can black beans, drained and rinsed

    2 cups pre-shredded carrots

    2 cups baby spinach, chopped

    1/2 cup sundried tomatoes, roughly chopped

    6 oz cooked chicken breast, sliced

    6 T fat free Italian dressing of your choice

    A dash of lemon juice

    Crumbled cheese (optional)
