Healthy Grain Apple Muffins Reduced Calorie

Ingredients

    4 eggs or Egg
    1.75 C Raw Sugar or Pure Maple Syrup
    1 C unsweetened applesauce
    1 -1/4 tsp Vanilla
    6 Fresh Apples, chopped, skins on (can also use Zuchinni 4-1/4 C)
    1 C Spelt Flour
    1 C Long Grain Brown Rice Flour or Kumut Flour
    1 C Aramath Flour
    1 tsp Salt
    2 tsp. baking soda
    2 tsp. baking powder
    1 Tablespoon ground Cinnamon
    1.5 C chopped nuts
    1-1/3 C Golden, Seedless Raisins
    3/4 C unsweetened coconut shreds
