- 1/2 c quinoa
4 small beets, shredded or sliced
3 medium carrots, shredded or sliced
1/2 small red onion, sliced (about 1/2 cup)
1 mango, diced
1 avocado, sliced or diced
1/4 cup raw almonds, chopped or sliced
1 lime, juiced and zested, divided.
1/4 c cilantro leaves
1/4 t ground cumin
1/4 t ground coriander
1 T coconut oil (or use canola oil)
2 cloves garlic
salt and pepper to taste

This Salad Combines Most Of My Favorite Foods: Avocado, Almonds, Beets, Mango, Onions, And Carrots. Topped With A Lime-cilantro Dressing, It's Irresistible!
