Red Currant Mini-muffins

Ingredients

    1 1/2 cup whole wheat flour
    1 T stoneground cornmeal
    1/2 cup sucanat
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    3/4 cup reduced fat buttermilk
    3/4 stick unsalted butter, melted and cooled
    2 large eggs
    1/2 tsp vanilla extract
    1/2 cup fresh red currants

I Bought Some Currants At A Farmer's Market And Had No Clue What To Do With Them. Looked Up A Few Recipes To Get Some Ideas And I Tweaked One Into This Healthier Version.Perfect Combo Of Sweet & Tart!
