Dr. Shapiro's Harvest Soup

Ingredients

    1 T EVOO
    1/2 LARGE White Onion, quartered and thinly sliced
    1 Large Red Bell Pepper, chopped
    1 Large Yellow Bell Pepper, Chopped
    3 Cloves Garlic, minced
    1 tsp chopped fresh rosemary (or basil works well too)
    Couple dashes salt/pepper
    1 Large Spaghetti Squash cut lengthwise into quarters, each cut into 1/4" thick slices
    2 Cans Del Monte stewed tomatoes
    2.25 cups vegetable broth
    Chopped fresh sage, 2 leaves
