Almond Meal Power Muffins


    In a large bowl add two cups of almond meal, aka almond flour. Then add 1/2 stick of melted butter, the equivalent of 4 eggs using liquid egg whites. Put in 2 tsp of baking powder and 1/4 tsp of salt (optional), as well as a 1/3 cup splenda, you can add more if you want a sweeter muffin. Add water and mix until ingredients and equally distributed. Add 1.5 cups of frozen berries into batter and fold in. Now fill 12 muffin tins with batter and top with 1 tsp of sugar free preserves.
