Makeover: Decadent Pumpkin Muffins

Ingredients

    1.5 cups Quinoa flour
    2 cups All Purpose Unbleached Flour
    2 tsp Baking Soda
    1 tsp Baking Powder
    1 tsp Salt
    1 tsp Nutmeg
    1 tsp Allspice
    1.5 tsp Cinnamon
    1 tsp Cloves
    2 cups Pumpkin puree
    1.5 cups Splenda (or other artificial sweetener)
    0.5 cup Brown Sugar
    0.58 cup unsweetened Applesauce
    1 cup Vanilla Yogurt (fat free or otherwise - I used 2%)
    4 egg whites
    1 large egg
    2/3 cup Water
    1 cup raisins

Description

I Love This Recipe But I Wanted To Try And Make It Even Healthier. I Decided To Sub Out Some Of The Regular Flour For A Higher Protein, Lower Carb Flour And To Remove The White Sugar And Replace With Splenda. They Still Turned Out Moist And Delicious!
