    3 -4 lbs beef roast, cross-rib roasts or rump roast

    2 onions, thinly sliced

    2 garlic cloves, minced
    1 teaspoon dry mustard
    1 teaspoon thyme leaves
    1 teaspoon salt
    1/2 teaspoon cracked black peppercorns
    4 tablespoons flour
    1 (10 3/4 ounce) can tomatoes, diced
    1 (14 ounce) can condensed beef broth (undiluted)
    1 tablespoon Worcestershire sauce
    2 tablespoons packed brown sugar (optional)
    2 tablespoons balsamic vinegar (optional) or 2 tablespoons red wine vinegar (optional)
