Ingredients

    50g wild rice
    50g brown rice
    65ml extra virgin olive oil
    Zest and juice of 1 lemon
    1 garlic clove, peeled and crushed
    Handful of fresh mint leaves, shredded
    Small handful of fresh flat leaf parsley, shredded
    35g dried blueberries
    25g pistachios, toasted
    25g flaked almonds, toasted
    1 tbsp pink peppercorns, lightly crushed
    Salt and freshly ground black pepper.
