Eggplant, Beef And Rice Casserole

Ingredients

    1 lb. eggplant
    1 cup frozen green beans, steamed
    8 oz very lean ground beef or lamb (I used Trader Joe 96/4 ground beef)
    2 tsp olive oil
    2 med onions, chopped
    2 cloves garlic, chopped
    1 c canned tomatoes and juice
    1 Knorr beef bouillon cube
    2.5 c water
    2 tsp. oregano
    1/2 tsp dried thyme
    1/2 tsp ground cinnamon
    1/2 tsp ground cloves
    1 cup long-grain white rice
    2 oz crumbled feta cheese, preferably imported
