Grandpa's Lasagna Basilicata

Ingredients

    Marinara Sauce:
    1 clove garlic
    1 tsp. olive oil
    1 8 oz. can Tomato Sauce, no added salt
    1 6 oz. can Tomato Paste, no added salt
    20-24 oz. water
    1/8 tsp. salt (optional)
    1 tbsp. oregano

    Filling:
    2 lbs. fresh ricotta, drained of excess water
    1 lb. Italian sausage, cooked, drained, diced
    2-3 large eggs
    1/2 c. fresh chopped Italian, flat leaf parsley
    1/8 tsp. salt
    1/8 c. finely grated Romano cheese

    1 lb. package of wide Lasagne noodles, made from 100% semolina flour

My Family's Traditional Lasagna. This Is One Of Our Favorite Dishes To Make For Christmas Dinner. An Alternate Version Of This Recipe Is Florentine Style, Substituting Chopped Spinach For The Italian Sausage, And Optionally, Adding A Layer Of Grated Moz
