Ingredients
- 2 T olive oil (I don't find this is needed)
1/2 link of chorizo sausage
3 med. potatoes chopped into chunks, I leave skin on
1 cup chopped onion, pretty big chunks
3 cloves garlic
2 bay leaves, leave whole and fish out when done cooking
4-6 cups chopped kale, I use a 'bag' of it here in the UK
salt & pepper to taste
1 can chickpeas
1 can diced tomatoes
1 quart chicken broth/ stock
