10-minute Apple Crumble (yes-really!)

Ingredients

    You will need:

    2 Tbs. Cornflour
    1/2 c. Soy milk

    Filling:
    4 large Golden Delicious apples (about 3 pounds)
    1/4 cup Organic cane sugar
    1 lemon, juiced
    2 Tbs. Brown rice flour
    1/2 tsp. Ground cinnamon

    Topping:
    1 c. White rice flour
    1 1/4 c. Rolled Oats
    1/2 c. Dark brown sugar (packed)
    1 tsp. Ground cinnamon
    Pinch fine salt
    8 Tbs (1 stick) cold butter, cut into small pieces (I use a non-dairy version like "I can't believe its not butter/lite" or Olivana lite olive oil spread)
