Ingredients
- 1 cup Roasting Chicken, light meat,, chopped or diced (remove)
3 medium Carrots, raw
2 medium stalks Celery, raw
1/2 a medium Onions, raw
3 cloves minced Garlic (or more if you wish)
6-10 spears Asparagus, fresh, woody bits removed
1 cup Kale, chopped
1 cup Spinach, fresh
1 1/2 cup sliced portobello Mushrooms, fresh,
1 Broccoli crown, fresh, chopped
1/4 cup Kitchen Basic Vegetable Stock
1 Tbsp Olive Oil
2 Tbsp chopped fresh Basil (or to taste. Dry can be used too)
For the mixed greens
1 cup Kale,, chopped
1 cup Spinach, fresh, chopped
2 cups Romaine Lettuce, shredded (or 1 head)
