Ingredients

    3 lb (1.5 kg) boneless lamb shoulder
    1 tbsp (15 mL) extra-virgin olive oil
    3 onions, sliced
    6 cloves garlic, minced
    1 tbsp (15 mL) dried oregano
    1 tbsp (15 mL) grated lemon rind
    1/4 tsp (1 mL) salt
    Pinch each allspice and cinnamon
    2 tbsp (25 mL) all-purpose flour
    2 cups (500 mL) beef stock
    1/4 cup (50 mL) tomato paste
    1 can (398 mL) artichoke hearts, drained and quartered
    1/2 cup (125 mL) crumbled feta cheese
    2 tbsp (25 mL) chopped fresh parsley
