Chicken Carbonara Risotto

Ingredients

    1 tbls extra virgin olive oil
    1 lb boneless chicken breast
    1 can (10.75 oz) condensed cream of chicken soup (98% fat free)
    1 cup frozen peas
    1.5 cups milk (i used almond b/c i am lactose intolerant)
    2 cups Minute Brown Rice, uncooked
    .25 cups Parmesan Cheese (or grated Romano cheese)
    OPTIONAL: can add 1/4 cup bacon bits (that nutrition is NOT included in the calculations for this recipe)
