Asian Veggie Salad

Ingredients

    1 lb fresh asparagus, cut in 1" pieces
    1 oz cellophane noodles, uncooked
    7 dried porcini mushrooms
    1 1/2 cup bean sprouts
    1 medium carrot, cut into julienne
    1/4 cup water chestnuts, chopped
    1 tsp dry mustard
    3 tbsp rice vinegar
    1 1/2 tbsp soy sauce
    8 large Napa cabbage leaves
