Tammi's Chicken Salad

Ingredients

    Parsley, dried, 0.5 tsp
    Rosemary, dried, 0.25 tsp
    Mayonnaise, regular (mayo), 2 tbsp
    Canned Chicken, 1 can (5 oz)
    Apples, dried, 0.25 cup
    Raisins, golden seedless, 0.25 cup (not packed)
    Yellow Peppers (bell peppers), 2 pepper, medium
    Cashew Nuts, dry roasted (salt added), 1 oz
    Chick Peas (canned), 0.5 cup
    rinse cans of chicken breast and chick peas in water and drain. Mix the chicken and chick peas together with just enough mayonnaise to lightly cover them. Add dried apples (or fresh if you prefer) and raisins to chicken mixture. Add seasoning to taste, along with the cashews ( or your favorite nuts lightly chopped) and mix all ingredients together.

    Take chicken salad and stuff medium sized yellow/red/orange/green pepper(s). Makes about 2 medium peppers.

    You can use whatever brands you like or use larger sizes for additional servings.
