Rice And Beans

Ingredients

    5 cans black beans (15 oz)
    3 tomatoes diced (or I just use 3 cans of diced tomatoes)
    1 bay leaf
    1 onion chopped
    1 TBS Vinegar
    1 1/2 TBS oregano
    1 1/2 tsp. liquid smoke (optional-Chris perfers it without)
    salt
    pepper

    Mix everything together and bring to a boil until tomatoes are soft. Serve on top of rice. Top with tomatoes & cilantro, guacamole, cheese and sour cream.

    GUACAMOLE:
    2 avacodos
    2 TBS lemon juice
    1 garlic clove
    1/2 tsp salt
    1/2 tsp pepper
    1/2 tsp tobasco sauce (optional)

    HERBED BASMATI RICE: (don't have to use this recipe but it's so good. I make it with just normal white rice since basmati is a lot more expensive)

    1 cup uncooked long-grain basmati rice
    3/4 tsp. kosher salt
    1 TBS Olive oil
    2 TBS minced fresh flat-leaf parsley
    1 TBS minced fresh dill (optional)
    1 TBS minced fresh scallions (white and green parts)
    pinch of ground pepper
    Cilantro

    Combine rice, 1 3/4 cup water, salt and oil in a small heavy-bottomed saucepan. bring to a boil over high heat. Reduce to low heat, stir once and simmer covered tightly for 15 min. TUrn off the heat and allow the rice to sit covered for 5 min. Add parsley, cilantro, scallions and pepper. (HONESTLY, I just use my rice cooker and add all the herbs in at the end!)
