1 med onion, chopped
1 large carrot, chopped
1/2 small fennel bulb, chopped
1 T minced garlic
2 t minced fresh thyme
2 t minced fresh rosemary
6 c chicken stock
1 lb. butternut squash, peeled, seeded, and cut into chunks
1 bay leaf
coarse salt & pepper
4 c chopped swiss chard leaves
1/4 lb green beans, trimmed and cut into 1" pieces
1 can (14.5 oz) diced tomatoes
1 can (15 oz) cannellini beans, drained and rinsed
Description
Yummy, Healthy Minestrone. Easy To Alter. I Used Kale Instead Of Swiss Chard And Added Some Orzo.I Ended Up With 8 Servings Out Of This.
