Huminbrd's Hodge Podge Veggie Soup

Ingredients

    1 can Swanson Lower Sodium Beef Broth
    1 can Butter beans, drained and rinsed
    1 can Farmer''s Market Organic Butternut Squash Puree
    1 can Bush's Best Reduced Sodium Garbanzos, rinsed and drained
    1 can Del Monte Diced Tomatoes - no salt added
    1 medium eggplant, cooked and cut in large squares
    3 cups frozen chopped collards
    1/2 large onion, chopped
    3 large stalks celery, chopped, including leaves
    15 small baby carrots, whole
    1/4 tsp cinnamon
    1/2 tsp cayenne pepper
    1/2 tsp garlic powder or 2 cloves chopped fresh garlic
    1/2 tsp cumin
    2 cups water
    4 oz colby cheese
