Easy Cheesy Lentils And Rice

Ingredients

    1 cup brown rice (uncooked)
    1 cup red lentils
    1.5 cups chopped broccoli
    3 medium carrots, sliced
    1 large onion, diced
    2 stalks celery, sliced
    1 pat butter (about 1 tsp)
    2 cups Vegetable broth (or chicken)
    1 cup shredded cheddar (smoky cheddar is DELICIOUS!!)
    2 TBSP Italian seasoning blend (marjoram, basil, thyme, oregano, etc)
