Pasta Salad With Green Goddess Pesto/dressing

Ingredients

    The Pesto Dressing:
    2 Tbsp soaked, raw cashews
    1 clove garlic, peeled
    1 cup fresh mixed herbs: 1/3 basil, 1/3 spearmint, 1/3 combination of any other fresh herbs you like, eg: lemon balm, oregano, marjoram
    1 medium Haas avocado
    2 Tbsp balsamic vinegar (this will darken the dressing. If you have color issues, use a paler vinegar)
    1/2 tsp maple syrup
    1 Tbsp lemon juice
    2 Tbsp vegan mayonnaise
    salt and pepper to taste

    The Pasta Salad:
    8 oz dry pasta of your choice. The smaller it is, the quicker it cooks
    4 cups broccoli cut into bite-sized florets
    2 cup yellow summer squash, sliced the long way in each direction, then cross cut so you get bite-sized 1/4 coins
    32 black olives, sliced into quarters
    4 Tbsp pine nuts, toasted until golden in the oven or in a skillet.
