    - 1 bag baby spinach (or 1 large bunch fresh organic spinach, leaves and soft stems)
    - 1 tbsp apple cider vinegar
    - 5 ounces sliced shiitake mushrooms
    - 1 cup flat leaf parsley, chopped
    - 1 tbsp apple cider vinegar
    - 1 tbsp extra virgin olive oil
    - 1/2 tsp course sea salt
    - 2 tbsp balsamic vinegar
