    3 cloves of garlic grated on a microplaner
    1 packet (76 gms) udon noodles
    1/2 cup thinly sliced carrots
    1/2 cup broccoli cut into small florettes
    1 cup spinach chopped
    4 oz super firm tofu cut into small cubes
    3 Tbsp mellow white miso
    2-3 Tbsp tamari, to taste
    2 scallions chopped (optional)
