    2 cans of black beans, rinsed
    3-4 stalks of green onions, sliced
    1 avocado, peeled & diced
    3/4 cup sour cream
    1/2 cup shredded cheese, plus another 1 cup for topping
    1 large can (26-32 oz) green enchilada sauce
    2-3 tsp hot sauce
    100 soft white corn tortillas
