Smokey Tomato Corn Cucumber "slaw"

Ingredients

    Veggies:
    -Cucumber, peeled, seeded, diced (approx 200 grams)

    -Tomato, I used 3 roma tomatos, diced (approx 275 grams)

    -1/2 sweet vildalia, Maui or other sweet yellow onion (approx 175 grams) *Can use Red Onion for more color but has stronger flavor

    -1 each 15.5 oz can Sweet White Whole Kernel Corn (425 grams) and 15.5 oz Golden Sweet Whole Kernel Corn (425 grams), Drained and rinsed.

    For lower calories you can use 15.5 oz (425 grams) Fresh Corn cut from cob or frozen from bag (make sure frozen has no sugar in ingredients)

    Dressing:
    1/4 cup Light Sour Cream (I like Daisy brand because it has most natural ingredients, not a lot of additives and fillers)

    2 TBSP Kraft Mayo with Olive Oil
    (has fewer calories than Fat Free kinds! and lower cholesterol)

    1 TBSP Apple Cider Vinegar
    (you can use white but this tastes better) Balsamic NOT reccomended as too heavy flavor and acidity not right for balance.

    1/2 tsp Sea Salt

    1/2 tsp Dry Mustard (for an extra whallop try chinese mustard)

    1/2 tsp celery seed (crush slightly in palm before adding)

    4-5 dashes of Smokey Paprika (add extra if you like it more smokey)

    1 tsp Rapadura (this is to balance acidity and smooth out the dressing flavor)

    *(this is an organic Whole Cane Sugar usually found in Health food stores, or Whole Foods. Or go to Rapunzel.com you can get it online. It looks a bit like brown sugar but has way less carbs AND a different flavor, softer and more mollassasy) You can substitute a smaller amount, 1/2 tsp Brown Sugar if you can't find Rapadura.
