Southwestern Quinoa Salad

Ingredients

    3/4 cup dry quinoa
    1 1/2 cups sodium-free chicken stock or water
    1/2 cup low-sodium black beans, drained and rinsed
    1/2 cup fresh or frozen sweet corn kernels, thawed
    2/3 cup grape tomatoes sliced in half
    1 oz low-fat feta cheese, crumbled

    Vinaigrette for Quinoa Salad
    1 TBS olive, walnut or avocado oil
    1 TBS lime juice (the juice of about two limes) or 3 packets True Lime crystallized lime (reconstituted in 3 TBS water)
    1 tbsp water
    1 fresh garlic clove, minced or 1 tsp jarred minced garlic
    1/2 tbsp cumin
    1/2 tsp oregano
    1/2 tsp chili powder
    1/2 tsp sea salt
    dash of ground pepper

Description

This Is An Easy Meal With Lots Of Protein And Flavor. You Can Serve This As An Entree Or As A Side Dish. Refrigerate The Leftovers For Quick Lunches And Dinners Later In The Week!
