Artichoke-bacon Chicken Salad Sandwiches

  • 1/4 teaspoon freshly ground black pepper
  • 1 garlic clove, minced
  • 2 cups shredded skinless, boneless rotisserie chicken breast
  • 1 cup drained canned artichoke hearts, chopped
  • 4 bacon slices, cooked and crumbled
  • 2 cups trimmed arugula
  • 8 (1 1/2-ounce) slices sourdough bread, toasted


Chicken Salad Makes A Good Sourdough Sandwich With Arugula, Artichoke Hearts, And Bacon. Fix The Salad Up To A Day Ahead, And Assemble The Sandwiches Shortly Before The Picnic.
