  • 1 tablespoon olive oil
  • Salt and pepper
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 3/4 cup milk
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup shredded Gruyère or Swiss cheese (3 oz.)
