Ingredients

  • 1 (6- to 6 1/2-pound) beef tenderloin, trimmed
  • 1 tablespoon freshly ground pepper, divided
  • 1 1/2 teaspoons salt
  • 1/2 cup chopped fresh flat-leaf parsley, divided
  • 1/4 cup chopped fresh rosemary

  • 3 tablespoons unsalted butter
