  • 1 1/2 pounds sweet-tart apples such as Jonathan or Gravenstein
  • 3 cups firmly packed brown sugar
  • 3 cups cider vinegar
  • 2 cups coarsely chopped onions
  • 1 cup golden raisins
  • 1/3 cup finely chopped fresh red or green jalapeño chiles
  • 1/4 cup minced garlic
  • 3 tablespoons ground cumin
  • 2 tablespoons paprika
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons black or yellow mustard seeds
  • 2 teaspoons ground coriander
  • 2 teaspoons pepper
  • 1 1/2 teaspoons salt
