  • 1/2 cup plus 1/2 tablespoon extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1/2 cup chopped shallots (about 4 oz.)
  • 2 tablespoons fresh thyme leaves or 1 tablespoon dried thyme
  • 1 tablespoon chopped Italian parsley
  • About 1/2 teaspoon salt
  • About 1/4 teaspoon pepper
  • 2 cups Cabernet Sauvignon or other dry red wine
  • 3 cups fat-skimmed low-sodium beef broth
  • 1/2 cup (1/4 lb.) plus 1 tablespoon butter or margarine
  • 1/4 cup chopped fresh mint leaves
  • 1 3/4 pounds Yukon Gold or russet potatoes, peeled and cut into 1 1/2-inch chunks
