- 1 1/2 cups mashed very ripe bananas (1 1/4 lb. unpeeled bananas, about 4 medium)
- 1/2 teaspoon vanilla extract
- 1/4 cup fat-free evaporated milk
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon butter
- 1/4 cup sweetened flaked coconut
- 1/2 teaspoon vanilla extract
