- 3/4 pound applewood smoked bacon, diced into 1-inch pieces
- 3/4 pound maple bacon, diced into 1-inch pieces
- 1 pounds Jimmy Dean ground pork sausage (mild or spicy)
- 2 pounds ground chorizo
- 1 pounds ground beef or ground turkey or ground venison
- 4 jalapeno peppers, coarsely chopped
- 1 orange pepper, coarsely chopped
- 7 cloves garlic, finely chopped
- 2 cans (28 ounces ea) chili beans
- 2 cans (15 ounces ea) crushed tomatoes
- 3 pounds onion, finely chopped (Vidalia sweet & Red Onion)
- 1 can (28 ounces) tomato sauce
- 1 tablespoon black pepper
- 4 tablespoons red chili powder
- 1 tablespoon crushed red pepper
- 1 cup ketchup (recommended: Heinz Kickin' Hot Ketchup)
- 4 dashes hot sauce
- 3 tablespoons Worcestershire sauce
- 1 cup Favorite Beer (I like darker beers or Heffeweissen)
- 1/4 cup sugar
- FOR HEAT
- 2 tbs Tabasco Sauce
- 1 habenero (de seeded/deveined)
- Cut a slit in habenero and allow to simmer in the chili, remove when done (creates a building heat)
