Pancetta and Rocket Pizza with Washed Rind Cheese and Balsamic Figs

Ingredients

cup water cup brown sugar 60g dried figs, thinly sliced 1 tablespoon balsamic vinegar 2 x 30cm pizza bases (see recipe below) or use store-bought bases 2 tablespoons olive oil 1 clove garlic, crushed 2 cups (250g) grated mozzarella 16 thin slices pancetta or bacon 2 x 140g pieces Tasmanian Heritage Red Square washed rind cheese,sliced 100g rocket 2 tablespoons olive oil, extra Sea salt and freshly ground black pepper, to taste Quick Pizza Dough Makes 2 x 30cm pizza bases 4 cups (500g) flour 3 teaspoons (10g) dried yeast 2 teaspoons salt 1 teaspoon sugar 350ml lukewarm water 2 tablespoons olive oil

Heat Water And Brown Sugar In A Saucepan, Stirring To Dissolve Sugar, And Then Boil For 10 Minutes. Add Figs And Vinegar And Allow To Cool. Combine Oil With Garlic And Brush Over Pizza Dough. Sprinkle With Mozzarella, Arrange Pancetta On Top And Bake At 2
