1   pound hot Italian sausage links, casings removed 1   tablespoon olive oil 1   carrot, diced 1   celery rib, diced 1   Spanish onion, diced 1/2   cup dry red wine 1   can (14-1/2 oz.) whole tomatoes in juice, chopped (reserve juice) 2   tablespoons tomato paste 1   pound dried shells, penne, rigatoni or ziti 1   bag (10 oz.) fresh spinach 1   cup drained and rinsed canned cannellini beans or white beans 1/3   cup chopped fresh parsley 1/4   cup freshly grated Parmesan cheese 2   tablespoons heavy or whipping cream 1/4   teaspoon salt 1/8   teaspoon freshly ground black pepper   Freshly grated Parmesan cheese, for garnish
