Beet Soup

Ingredients

1 Tbsp. oil 1 medium onion, chopped 2 celery stalks, chopped 1 large carrot, chopped 2 large cloves garlic, chopped 6 cups water or stock (chicken or vegetable) 5 cups peeled and chopped beets (about 3 or 4 bunches of beets, or 8 to 10 medium beets) 1 large potato, peeled and chopped (optional) 2 Tbsp. lemon juice, or to taste ~ Salt and pepper, to taste ~ Sour cream or plain yogurt, for garnish ~ Minced fresh dill and/or parsley, for garnish (optional)
