3 tablespoons butter, clarified
1/2 ounce dried morels (about 1/2 cup reconstituted) or 1/2 cup fresh mushrooms, quartered
1 tablespoon shallots, chopped
1/2 cup (4 ounces) dry white wine
1/2 cup (4 ounces) veal stock
1/2 cup (4 ounces) heavy cream
Lemon juice to taste
Kosher salt and fresh ground black pepper to taste
