1/4 cup olive oil
3 cloves fresh garlic, minced
1 teaspoon fresh ginger, grated
1/2 cup fresh celery, chopped
4 cups fresh tomatillo, seeded and diced
1/2 tablespoon each lemon and orange rind, grated
1/2 cup spring onions, chopped
1/2 cup golden raisins
1/2 cup granulated sugar
1/4 cup brown sugar
1 1/2 cups raspberry vinegar
1/4 cup fresh sweet basil, snipped
Salt and white pepper, freshly cracked, to taste
Sandwiches:
8 round focaccia loaves
2 1/2 pounds hickory smoked ham, thinly sliced
1 1/2 pounds Wisconsin Provolone cheese, sliced
2 1/2 pounds Wisconsin Asiago cheese, shredded
Red and green bell peppers and chives, chopped, as needed
