2/3 cup buttermilk

2 teaspoons honey
1 teaspoon kosher salt
1 teaspoon cracked black pepper
1/4 teaspoon hot pepper sauce
1/4 teaspoon ground red pepper
1 cup aged Wisconsin Parmesan cheese, grated
1 1/2 gallons baby greens or arugula
1 1/2 quarts aged Wisconsin Parmesan cheese, shaved
PARMESAN CRACKERS:
1 1/2 quart chicken stock or water
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground black pepper
1 1/2 teaspoons cumin, ground
1 teaspoon ground red pepper
3 cups cornmeal
3 cups Wisconsin Aged Parmesan cheese, grated
