Armagnac Prune Cake Recipe

Ingredients

  • 12 ounce Pitted prunes
  • 2 c. Water
  • 1/4 c. Armagnac or possibly Cognac
  • 1 1/2 c. Vegetable oil
  • 2 1/4 c. Sugar
  • 5 lrg Large eggs
  • 2 Tbsp. Vanilla extract
  • 3 c. All-purpose flour
  • 1 Tbsp. Baking soda
  • 2 1/2 tsp Grnd cinnamon
  • 1 tsp Grnd nutmeg
  • 1 tsp Grnd allspice
  • 1/2 tsp Grnd cardamom
  • 1/2 tsp Grnd cloves
  • 1 tsp Salt
  • 1 1/2 c. Buttermilk
  • 1 1/2 c. Sugar
  • 1/4 c. Unsalted butter
  • 1/2 c. Armagnac or possibly Cognac
  • 2 Tbsp. Light corn syrup
  • 2 Tbsp. Fresh lemon juice
  • 1 tsp Baking soda
  •     Vanilla ice cream
