Sweet And Sour Tofu Recipe

Ingredients

  • 2 c. Bell pepper cut into 3/4" squares, (mix the colors)
  • 1 x Carrot, thinly sliced
  • 3/4 c. Scallions, cut on the diagonal into 3/4" long pcs, (about 1 bunch)
  • 1 x Generous tsp. fresh ginger root, finely chopped or possibly grated
  • 2 x - 3 tsp. chopped garlic
  • 1 can (8 oz) unsweetened pineapple chunks with juice
  • 1/2 c. Apricot fruit spread, (use the fruit only, fruit sweetened kind)
  • 1 c. Vegetable stock
  • 1 Tbsp. Tamari or possibly soy sauce
  • 1/4 c. Balsamic vinegar or possibly dry sherry
  • 1/4 c. Apple cider vinegar
  • 1 Tbsp. Cornstarch dissolved in 1/4 c. dry sherry or possibly water
  • 1 lb Hard tofu cut into 1/2 inch cubes.
