• 2 tsp curry pwdr (use your favourite indian one)
• 1 x heaped tsp tomato puree
• 200 ml red wine
• 150 ml chicken stock
•     Juice 1/2 lemon
• 1 x Strip finely peeled lemon zest
• 1 x bay leaf
• 1 x salt and pepper
• 6 x dry apricots
• 2 Tbsp. mayonnaise
• 2 Tbsp. creme fraiche
• 6 x generous wedges of iceberg lettuce
•     good crusty bread of your choice
