- 1 x Strip finely peeled lemon zest
- 1 x bay leaf
- 1 x salt and pepper
- 6 x dry apricots
- 2 Tbsp. mayonnaise
- 2 Tbsp. creme fraiche
- 6 x generous wedges of iceberg lettuce
