Lobster Stock Recipe

Ingredients

  • 4 x Lobsters - (1 1/2 lbs ea)
  •     (or possibly 4 pounds crayfish)
  • 8 Tbsp. Unsalted butter - (1 stick)
  • 1/4 c. Extra virgin olive oil
  • 2 med Onions finely minced
  • 2 x Carrots peeled, minced
  • 2 x Celery stalks peeled, minced
  • 1 1/2 tsp Salt
  • 2 c. Dry white wine
  • 1 c. Madeira
  • 5 c. Fish stock, clam juice, or possibly water
  • 3 c. Tomato juice
  • 1 x Garlic head, with skins halved horizontally
  • 1/2 bn Fresh parsley, with stems
  • 1 Tbsp. Black peppercorns
  • 2 x Bay leaves
  • 1 1/2 tsp Dry tarragon
  • 1 tsp Dry thyme
  • 1/2 tsp Cayenne pepper
