Matzo Ball Soup Recipe

Ingredients

  • 1 x Chicken - (2 1/2 to 3 lbs)
  • 1 lrg Onion studded with
  • 3 whl cloves
  • 2 x Carrots quartered
  • 2 sm Celery stalks cut 3" pcs
  • 2 sm Leeks split lengthwise
  • 1 x Parsley root trimmed
  • 2 x Parsnips quartered
  • 1 x Fresh thyme sprig
  •     (or possibly 1 tspn dry thyme)
  • 6 x Parsley sprigs
  •     Salt to taste
  • 2 lrg Large eggs beaten lightly
  • 3 Tbsp. Seltzer
  • 2 Tbsp. Rendered chicken fat melted
  • 1/4 tsp Kosher salt
  • 1/4 tsp Freshly-grnd black pepper
  • 1/2 c. Matzoh Meal

Description
